Gin Distilling Class.

This is your opportunity to spend a day at Big Tree Distillery on Jack's Springs Farm. Learn to distil your very own gin with the help of the team at the award winning gin distillery. A behind the scenes look at the world of gin distilling. Class sizes are limited to only 10 people per class. This is a hands on experience where each participant will spend the day learning about the distillery and the process of gin making with the use of individual copper alembic stills (two people per still) you will learn and use the one charge distillation method. Once you have made your gin you get to take it home! Your very own 500ml of freshly distilled gin. 

On arrival  - Morning tea

Meet and greet, chat with distillery team and other participants.

Distillery Tour

Gin Tasting of Big Tree Gins.

Process of gin making - short explanation and history.

Botanical session - learn about botanicals and what the flavours will potentially offer. Choosing your botanicals for your gin. Consideration phase. What to leave in and more importantly what to leave out.

Still/Equipment - Getting to know the still you will be using.

Gin preparation - Before lunch you will start making your very own gin. Preparing  and steeping botanicals.

Lunch - Farm cooked lunch served with a G&T (Please let us know if you have any dietary requirements).

Distillation - You will fire up your still and watch and wait making the decision on when to make your gin cuts.

Adjusting and Bottling - This is the exciting part. adjust your gin in strength to proof, measuring the alcohol content vs the flavour and the aroma profile. Decisions decisions....

Concluding the session with a G&T.

Enjoy a well earned G&T or two made with either ours or yours. We only use good quality tonic water.

Transfers to Woodend train station can be arranged. Please let us know in advance.

Note when you are coming to visit us your GPS will sometimes want to send you up smaller dirt roads that are normally used as access in an emergency. To avoid that hassle please access Hennerbergs Road via Whitebridge Road, which is off Three Chain Road.
